Buttercream Frosting

Let me just say that I am the biggest dessert person you will ever meet! I am not a fan of fruity desserts, but anything chocolate and anything real sugary just pass it right over.

For Paisley's party I did regular cake mix to make it simple and then searched high and low for the best frosting recipe and this recipe by far is my favorite! If I could make an entire batch every week and just eat it I would.

Once you try this buttercream frosting I promise you wont go back to any other kind.

This is a Martha Stewart recipe, but you can substitute any kind of flavoring for the vanilla. We did a batch of vanilla and a batch of almond and it was pure heaven. For different colors add your choice of food coloring.

Ingredients:

1. 4 sticks of unsalted butter, softened
2. 6 cups confectioners sugar
3. 1/2 teaspoon vanilla extract (I added just a touch more)
4. Pinch of salt

Directions:

1. On medium-high speed beat butter until pale and creamy. Reduce speed to medium and add sugar 1/2 cup at a time, mixing well. Add vanilla and salt. Raise speed to medium-high and beat until smooth.
**Will be thick at first but as it sits and warms it gets a little thinner and easier to spread or to pipe onto cupcakes or cake.

Enjoy!

Birthday Cake Pancakes

I made these for my husbands birthday and these honestly were way beyond what I thought they would be! Such a fun, new birthday tradition we will be adding to the Foltz household!

Warning: These are very sweet, but so delish and addicting!

I combined several recipes together, because the first one I chose didnt have eggs, but was lacking in flavor so I found another recipe and added a few things from it, which gave it the taste that I was going for. The glaze is super simple too. Now go make these!!

Ingredients:

3/4 C Pancake Mix {I used whole foods buttermilk brand}
1 C Yellow Cake Mix
1 1/2 C Water
1/3 C Milk
1 Tbsp Sugar
1 Tsp Vanilla
Pinch of Salt

Glaze Ingredients:

1 C Powdered Sugar
1 Tbsp Milk
1/2 Tsp Vanilla
2 Tbsp Butter
Sprinkles

Directions:

1. Mix all pancake ingredients together in a bowl. If its too thick, add a little more milk to get desired consistency. If you want more of a cakey flavor, then add more cake mix, but I found 1 cup to be just the right amount

2. Preheat a skillet to medium low heat. Spray with cooking spray. Pour batter into 1/4 cup measurements onto skillet

3. Let cook till bubbles form on top {2-3 minutes} and flip to other side. Serve with Vanilla Glaze

4. For Vanilla Glaze: Mix powdered sugar, butter, milk, and vanilla until glaze forms. You may need to add a little more milk until you reach desired consistency so that it can be drizzled over pancakes.

5. Sprinkle, sprinkles on top when you have added the glaze onto the pancakes and enjoy!
**Makes 8 large pancakes

Easy peasy!

Black Beans & Rice {Recipe}

As promised, here is the recipe for this ahhh-ma-zing dish.
I dont know about you all, but I had never had Cuban food till I moved to FL and lets just say I have been missing out my whole life!
Who knew it would be so good!? I surely didnt.

My hubby made this amazingness on Memorial Day and since then it has become a staple in our house.
The yellow rice is just some random pack of rice he grabbed at Publix. I cant even remember the name to be honest, and shame on me for not getting a photo of it. I will update post here soon with a pic

This is a simple, simple recipe. We added chicken to it the other night and it still came out wonderful!
If you are adventurous enough, go a head and add in some kick.
I added homemade salsa the first time, and it was delish. The other night I tried it with Siracha and it was still great, only a little hotter.

Add it to your dinner menu this week and let me know what you think :)
